γ-Amino butyric acid (GABA) was developed by Japan's ORYZA Oil Chemical Company in the mid-1990s.
In 2001, it was officially listed as food grade, and in 2005, Taiwan's Health Department listed GABA as food.
In 2009, China's Ministry of Health listed GABA as a new resource food.
GABA appears as white crystalline powder and is not optically active.
Melting point 195-204℃ (decomposition), soluble in water, slightly soluble in ethanol and acetone, insoluble in benzene and ether, decomposition will lose water to form pyrrolidone.
There are two GABA synthesis and conversion pathways in plants:
①The GABA shunt, in which glutamate is decarboxylated by glutamate decarboxylase (glutamic acid decarboxylase, GAD) to synthesize GABA
②The polyamine degradation pathway (polyamine degradation pathway), in which GABA is formed from polyamine degradation products.
